Ingredients
- 500g MyOrganics™ Dried Mixed Fruit
- 2 cups fresh orange juice
- 2 cups organic self-raising flour
Method
Combine mixed fruit and orange juice in a saucepan and bring to the boil. Reduce heat to low and simmer for 3 minutes. Remove from heat and rest until completely cool.
Preheat oven to 170°C (150°C fan-forced). Line a loaf tin with baking paper and set aside.
Sift the self-raising flour over the soaked fruit and mix well.
Pour into loaf tin and bake for 30-40 mins on the lowest shelf.
Remove from oven and leave cake to cool entirely in the tin.
Wrap in foil and keep in an airtight container.
