Aloo Ki Kheer

Ingredients

2 large potatoes
1.5 L milk
5 tbsp sugar
Large pinch of ground green cardamom
1 tbsp butter or ghee
1 tbsp MyOrganics raisins
2 tsp rosewater
6 MyOrganics pistachio nuts, finely slivered (to decorate)

Method

Finely grate potatoes and put in a bowl of water (to prevent from browning).

In a heavy based saucepan bring the milk to the boil, add the sugar and cook until the mixture is thick & reduced by half, add the cardamom.

Heat the butter or ghee in a frying pan over medium heat. Squeeze excess water from the grated potatoes and add to the pan, lightly frying for 2 to 3 mins, then add the milk and continue to boil over medium heat for 7 – 8 minutes.

Add the raisins and simmer for 5 minutes. Remove from heat and allow to cool.

When cool, sprinkle with rose water & pistachio

Slice.
