Developed by nutritionist, naturopath and recipe developer Casey-Lee Lyons from Live Love Nourish (www.livelovenourish.com.au) this healthy, sugar free Apple Crumble Parfait is made with layers of spiced apple and yoghurt and topped with a nutty crumble.
This recipe is free from gluten, dairy and sugar and vegan friendly.

Ingredients
- 2 large green apples, peeled, thinly sliced
- 1 tsp coconut oil
- 1/2 tsp cinnamon
- pinch nutmeg
- 150g coconut/almond yoghurt
Crumble:
- 1/2 cup (60g) MyOrganics almond meal
- 1/2 cup (45g) MyOrganics desiccated coconut
- 1 TBSP (20ml) coconut oil
- 1 TBSP (20g) almond spread/nut butter
- 1/2 tsp vanilla powder
- 1/2 tsp cinnamon
- pinch nutmeg
- 2 TBSP (20g) MyOrganics flaked or slivered almonds
- 1 tbsp coconut sugar or maple syrup (optional)
Method
- Begin by making crumble; pre-heat oven to 175’C.
- Melt coconut oil with almond butter in a small saucepan.
- In a mixing bowl combine almond meal, coconut, vanilla, cinnamon, nutmeg and sweetener if using. Pour in melted oil/almond butter mixture. Combine well.
- Stir through flaked almonds.
- Spread crumble onto a baking tray and bake for 8-10 minutes or until golden (check regularly).
- Meanwhile melt coconut oil in a small saucepan, add apples, cinnamon and nutmeg. Cook over low-medium heat and stir frequently until apples are softened.
- Assemble parfaits in glasses with layers of apple, yoghurt and crumble and repeat.
- Serve warm or place in fridge to chill.
