Apple Crumble Parfaits

Developed by nutritionist, naturopath and recipe developer Casey-Lee Lyons from Live Love Nourish (www.livelovenourish.com.au)  this healthy, sugar free Apple Crumble Parfait is made with layers of spiced apple and yoghurt and topped with a nutty crumble.

This recipe is free from gluten, dairy and sugar and vegan friendly.

Ingredients

  • 2 large green apples, peeled, thinly sliced
  • 1 tsp coconut oil
  • 1/2 tsp cinnamon
  • pinch nutmeg
  • 150g coconut/almond yoghurt

Crumble:

  • 1/2 cup (60g) MyOrganics almond meal
  • 1/2 cup (45g) MyOrganics desiccated coconut
  • 1 TBSP (20ml) coconut oil
  • 1 TBSP (20g) almond spread/nut butter
  • 1/2 tsp vanilla powder
  • 1/2 tsp cinnamon
  • pinch nutmeg
  • 2 TBSP (20g) MyOrganics flaked or slivered almonds
  • 1 tbsp coconut sugar or maple syrup (optional)

 

Method

  1. Begin by making crumble; pre-heat oven to 175’C.
  2. Melt coconut oil with almond butter in a small saucepan.
  3. In a mixing bowl combine almond meal, coconut, vanilla, cinnamon, nutmeg and sweetener if using. Pour in melted oil/almond butter mixture. Combine well.
  4. Stir through flaked almonds.
  5. Spread crumble onto a baking tray and bake for 8-10 minutes or until golden (check regularly).
  6. Meanwhile melt coconut oil in a small saucepan, add apples, cinnamon and nutmeg. Cook over low-medium heat and stir frequently until apples are softened.
  7. Assemble parfaits in glasses with layers of apple, yoghurt and crumble and repeat.
  8. Serve warm or place in fridge to chill.
