Golden Spiced Banana Breakfast Loaf

Makes 1 loaf

Ingredients –

  • 2 manky over ripe bananas
  • 3 eggs – vegan friends sub flax/chia egg
  • 4 Tbsp cashew butter
  • 1 tsp vanilla
  • 1 Tbs honey
  • 1/2C MyOrganics coconut flour
  • 1 tsp turmeric
  • 1 tsp of cinnamon
  • 1/4 tsp each of ginger, nutmeg, cardamom & cloves .
  • 1/2 tsp baking pwd
  • 1/4 tsp baking soda
  • 1 scp collagen – optional for protein & gut healing goodness

For the topping-

Method –

  1. Blend/Stir all ingredients except your toppings
  2. Pour into a lined/greased loaf pan
  3. Sprinkle with toppings
  4. Bake at 175’C/350’F for 40 mins
